I hope you all had a wonderful Thanksgiving and were fortunate to be off and enjoy the long weekend!
In my blog post last week, I shared some tips for success on how to “best” eat healthy through the holiday season. I hope you found one or two of them useful as you celebrated with friends and family. Perhaps you were even able to share a few tips
If you found the past few days challenging, this may be time to offer yourself some self-compassion, find a bright spot and go back to the philosophy that this is PROGRESS not PERFECTION.
Perhaps think about how you want to measure progress. Do you feel better than you did this time last year? Being aware of your choices and actions counts as progress too.
If you had some challenges, what did you learn and how can you make a change to your choices going forward? Please share with me what worked well over the holiday and what your intentions are over the next few weeks.
As a reminder, this is NOT an all or nothing plan, this is your everyday life and how small changes add up to create your desired outcome. What ever choice you made this morning, last night or last week you can “make it right with your next bite”. Please be kind to yourself, don’t wait for a special date, day or time to “get back on track”. This is about the journey and figuring out how to be comfortable and confident with getting it right 80% of the time.

Are you tired of Turkey? It’s time to switch gears and make a pot of warm veggie chile that is a one pot meal! Filled with an assortment of beans, a bit of spice and depth of flavor.
A great meal to serve for Sunday football, family gatherings or multiple make ahead meals that freeze well! As the stew simmers, the flavors mellow and blend making the chile aromatic and satisfying!
Prep Time: 30 Minutes
Cook Time 2 Hours
Serves 10 – 12
- 2 tbs water
- 3 cloves minced garlic
- 1 1⁄2 cups chopped celery
- 1 1⁄2 cups chopped red pepper
- 1 cup chopped onion
- 2 28 oz cans Whole canned tomatoes cut up
- 3 15 oz can beans kidney, black, northern, kidney etc rinsed and drained
- 1⁄2 cup raisins
- 1⁄4 cup red wine vinegar
- 3-4 tsp chile powder This is up to your spice level
- 1 tbs parsley chopped
- 1 1⁄2 tsp dried basil crushed
- 1 1⁄2 tsp dried oregano crushed
- 1 1⁄2 tsp ground cumin
- 1 tsp ground allspice
- 1⁄2 tsp salt
- 1⁄4 tsp ground pepper
- 1⁄4 tsp Tobasco
- 1 bay leaf
- 1 12 oz beer
- 1⁄4 cup cashews
- 1 cup cheddar cheese – shredded optional
In a 6 quart pot, heat water. Add celery, rep pepper, onion and garlic. Cover and cook over medium heat about 10 minutes or until vegetables are tender. stirring occasionally
Add un-drained tomatoes, drained beans, raisins, vinegar, chili powder, parsley, basil, oregano, cumin, allspice, salt, pepper, Tabasco and bay leaf
Bring to a boil; reduce heat and simmer covered for 1 1/2 hours
Stir in beer, return to boiling and simmer, uncovered for 30 minutes or desired consistency
Remove bay leaf
Stir in cashews
Optional, sprinkle cheese on top and serve
Make a day or two ahead, as the more it sits, the better it tastes!
Doubles easily and freezes great too!
